LE JARDIN de Joël Robuchon

Chef of the Century Joël Robuchon's 3 Michelin Star restaurant is located at The Landmark in Central (Hong Kong).

 Vegetable Jelly with Celery Root 
Not a fan of the taste and/or smell of celery so I didn't like the palate cleanser that much. The vegetable jelly had a good stock base though.

Sweet Potato Puree with Bacon Emulsion
I loved the smokiness of the bacon foam on top of the puree. The combination of the layer of foam with the puree was exquisite.

Collection of House Bread
 Really filling if you try to finish everything.  The restaurant offers you a choice between salted and unsalted whipped butter.  The salted butter was blended with sea salt and you can taste the bits.  Amazing bread.

Scampi Ravioli with Foie Gras Sauce and Black Truffle
 One of the best things I've ever put in my mouth.  A very sensual dish of fresh langoustine wrapped in a thin layer of ravioli pasta topped with an amazing sauce of foie. The delicate taste of the scampi was a perfect contrast to the robust metallic flavor of the foie.  The shavings of black truffle on top completed the dish and put everything all together. Do not step out of Robuchon without sampling this one.

Free-Range Quail with Foie Gras and Truffled Mashed Potatoes
Quail was crispy on the outside and tender on the inside. Perfectly cooked. The dish could have used a lot more foie in my opinion or just do without it completely. The potatoes were silky and smooth to the tongue. It melted like butter inside my mouth. One of best mashed potatoes I've ever had in my life.

Pan-Seared Sea Bass with Lemongrass Foam
The sea bass was a tad bit overcooked and I didn't like the fact that the subtle taste of the fish was tarnished by the strong lemongrass flavor. I guess I'm just used to finding lemongrass in soup and prefer my sea bass simply seared and topped with brown butter.

Desserts from the Trolley
They gave us some desserts to cap off the night and remind us of the amazing experience we just had. I'm not a big fan of macaron but everything else was great.

Our experience was definitely surreal.  The service was, as should be expected, excellent. The food amazing.  The only thing that could've made the moment even more perfect was if we would've been able to meet THE Joël Robuchon but sadly, we didn't have a chance to do that. But there's always a next time and I'm surely looking forward to that.

By the way, did I mention that the restroom doors open and closed automatically?!? Fucking cool!
